MARINATED FLANK STEAK



Flank steak is a great weeknight option because it takes only 10-15 minutes to broil in your oven, and it's usually a crowd pleaser with adults and kids alike (I even make this when we have company). Serve this with whatever fruit or vegetable your kids will eat (I like sweet potatoes), salad and rice or pasta, and use leftovers for steak sandwiches, burrito bowls or tacos the next day.


K I D D U T I E S : (kids can do any or all)

Gather marinade ingredients

Measure and whisk marinade


I N G R E D I E N T S :

1 1/2 to 2 lbs flank steak (this will feed about 2 adults and 3 kids - if you want leftovers, go for 2 lbs)


1/2 cup vegetable or olive oil

1/3 cup soy sauce

1/4 cup red wine vinegar

2 tbsp lemon juice

1 1/2 tbsp Worcestershire sauce

1 tbsp dijon mustard

2 cloves minced garlic

1/2 tsp black pepper


I N S T R U C T I O N S :

Place flank steak in a zip top plastic bag. Whisk marinade ingredients in a bowl and pour over flank steak in the bag and seal to close. Refrigerate 1-2 hours or up to 6 hours. Preheat oven broiler, place flank steak flat on a wire rack on a rimmed baking sheet. Broil flank steak 4-5 minutes per side for medium rare, 6 minutes per side for medium, 7-8 minutes for medium well. Remove from oven, cover with foil and let rest 5 minutes. Slice thinly across the grain to serve.
