CLASSIC MEATBALLS IN RED SAUCE

This recipes is so simple my 6 year old makes it, there is no chopping required (yay!) and instead of browning on the stove-top, you bake them in the oven - we call that a weeknight winner. Serve with crusty bread and a spinach salad, zoodles or fruit and you've got yourself a complete meal.

I N G R E D I E N T S :

1 pound ground beef

1/2 pound mild Italian sausage

1/3 cup plain dried breadcrumbs

1/3 cup water

2 cloves garlic, minced (use jarred minced garlic for a no-chopping recipe)

2 large eggs

1/4 cup grated Romano cheese plus more for serving

1 14oz can crushed tomatoes


I N S T R U C T I O N S :

Preheat oven to 425°F

In a large bowl, combine breadcrumbs and 1/3 cup water and let it absorb for a minute. Add beef, sausage, eggs, garlic and Romano cheese, 1/4 tsp salt and 1/4 tsp pepper and mix well with a fork or your hands.


Form mixture into 1.5 TBSP size balls (about the size of a golf ball) and place 15 of them in a 9x13 baking dish - freeze any extras*.


In a separate bowl, combine the crushed tomatoes, 1/4 cup water, 1/4 tsp salt and 1/4 tsp pepper. Spoon sauce over and around meatballs in the baking dish. Grate additional Romano cheese over the top and bake in preheated oven for 18-20 minutes. Serve hot with additional Romano on the side.


*To bake frozen extras, simply defrost in the refrigerator, make additional sauce, and bake as directed above.
